Creamy Macaroni Salad

Ingredients

  • 1 Pound small ridged elbow macaroni noodles
  • liberally salted water
  • 2-3 tablespoons dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 1/3 Cup mayonnaise
  • 1 tablespoon vinegar
  • 1 res onion finely diced
  • 3/4 Cup finely diced celery

Preparation

Step 1

Cook pasta in liberally salted water
Drain pasta then rinse in cold water. Drain again then immediately ass pasta to a large mixing bowl. Don't let it set and dry out you want the pasta to still be on the moist side.
Add parsley, garlic, salt, pepper and Dijon mustard to pasta and stir well until well combined. Let pasta marinate in the seasonings for 15-20 minutes covered at room temp. Doing this allows pasta to soak up the flavors before adding the mayonnaise Whip together mayonnaise and vinegar and set aside. Add onion, celery and mayo mixture to pasta and stir until all ingredients are thoroughly combined, Cover and refrigerate 1-4 hours before serving
