Easy Enchilada Casserole

You can make this layered casserole with ground beef or chicken. Very quick and easy. When you serve, pile high with lettuce, tomato, onion, salsa, etc. I like to serve with toppings in separate bowls, and let everyone add what they want.

Ingredients

  • Toppings:
  • 1 pound lean ground beef (can substitute cooked chicken, even store-bought rotissiere works well)
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 2 cans (10-oz) Enchilada Sauce
  • 1 package (6-inch) flour tortillas (about 8-10)
  • butter
  • 2 c. (8-oz) shredded cheddar cheese, divided
  • 1/4 c. water
  • Sliced green onions
  • Shredded lettuce
  • Chopped tomatoes
  • Chopped onions
  • Sour cream
  • Salsa

Preparation

Step 1

Preheat oven to 375 degrees.

Brown ground beef with onions and garlic. Drain off fat. Stir in enchilada sauce. Let simmer about 5 minutes.

Thinly spread butter on tortillas. Tear into pieces to cover bottom of 9x11” glass baking dish (butter side down). Layer meat, then cheese. Repeat to make 2-3 layers, ending with cheese layer.

Pour 1/4 c. water around edge of pan.

Bake 20 minutes, or until cheese melted and bubbly. Cool 5 minutes, then cut into squares.
