Ingredients
- 4 tsp. olive oil
- 1 medium onion, chopped
- 1 large red bell pepper, chopped
- 2 cloves garlic, chopped
- 2 16 oz. cans black beans, drained (reserve 1/2 cup liquid)
- 1 16 oz. can tomato sauce
- 2 tsp. chili powder
- 1 tsp. dried oregano
- 1/2 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 1/2 tsp. salt
- 1/2 cup chopped cilantro

Preparation
Step 1
1) Start cooking quinoa.
2) In a large saucepan, heat oil over medium-high heat.
3) Add onion, bell pepper, and garlic and cook for 5 minutes.
4) Add black beans with 1/2 cup reserved liquid, tomato sauce, chili powder, oregano, cumin, and cayenne pepper.
5) Bring to a boil, stirring occasionally. Then reduce heat to medium-low, cover, and cook for 15 minutes.
6) Season with salt, serve over quinoa, and garnish with cilantro.
