    medium onion, chopped

    large red bell pepper, chopped

    cloves garlic, chopped

    16 oz. cans black beans, drained (reserve 1/2 cup liquid)

  • 1

    16 oz. can tomato sauce

  • 2

    tsp. chili powder

  • 1

    tsp. dried oregano

  • 1/2

    tsp. ground cumin

  • 1/4

    tsp. cayenne pepper

  • 1/2

    tsp. salt

  • 1/2

    cup chopped cilantro

Directions

1) Start cooking quinoa. 2) In a large saucepan, heat oil over medium-high heat. 3) Add onion, bell pepper, and garlic and cook for 5 minutes. 4) Add black beans with 1/2 cup reserved liquid, tomato sauce, chili powder, oregano, cumin, and cayenne pepper. 5) Bring to a boil, stirring occasionally. Then reduce heat to medium-low, cover, and cook for 15 minutes. 6) Season with salt, serve over quinoa, and garnish with cilantro.
