Buffalo Salmon

Ingredients

  • 1 2LB piece salmon fillet w/ skin
  • 5 TBL unsalted butter
  • 1/4 C hot sauce
  • 1/3 C panko
  • 1 TBL veg. oil

Preparation

Step 1

preheat oven to 425 w/ rack in upper 3rd
lightly oil shallow baking pan

melt butter w/ hot sauce & w/ 4tsp each
S & P over med heat
set aside 1/4 C sauce

toss panko w/ oil in bowl

put salmon, skin side down in baking
pan
sprinkle with 1/4 teaspoon each of
salt and pepper, then brush with
remaining sauce
sprinkle panko evenly over top of
fish

bake until panko is golden & fish is
just cooked through (16-22 min)
serve reserved sauce on side
