Ingredients

  • 12 oz Bacon
  • canola oil
  • 1 cup minced onion
  • 1 cup honey
  • 1 cup Banyuls( or red balsamic) vinegar

Step 1

Grind bacon if you have a meat grinder or freeze for 40 minutes and mince as fine as you can.

add canola oil to pan cook bacon breaking up pieces reduce heat stirring for 7-8 minutes until nicely brown strain fat

Place onions in 6 cups boiling water simmer for 10 minutes drain and sqeeze out water in a kitchen towel

place honey and vinegar in a pan medium heat reduce to simmer for 30 minutes until 1 cup remaining

stir onion and bacon into vinegar honey mixture cook for about 10 minutes cool to room temp

good with eggs or on toast maybe on icecream
