  • 4 ounces goat cheese

Step 1

Bring 4 cups of water to boil. Add cornmeal to the water in a thin steady stream, whisking constantly to avoid lumps. Reduce heat to a simmer and cook for 15 minutes, adding salt and pepper. When polenta is smooth and creamy, and cooked through, add goat cheese and butter, stir to incorporate. Taste for seasoning and adjust as necessary.
