Ingredients

  • 2/3 Cup corn chex
  • 1 1/2 Pounds ground beef
  • 1 Cup cooked white or brown rice
  • 2 Eggs
  • 3 Tbsps gluten-free ketchup such as Heinz
  • 1 TSp dried parsley
  • 1 Tsp finely chopped onion
  • 1/2 Tsp salt
  • 1/4 Tsp pepper
  • 1/3 Cup gluten-free ketchup such as Heinz Tomato Ketchup
  • 2 Tbsp packed brown sugar

Preparation

Step 1

1. Place the corn chex in a plastic bag. Use a rolling pin to crush the cereal. Set aside.

2. In a large bowl combine ground beef, rice, eggs, 3 tbsp ketchup, parsley, onion, salt and pepper. Add the crushed cereal. Mix well.

3. Shape the meat mixture into 2 small loaves. Place on a baking sheet.

4. In a small bowl mix 1/3 cup ketchup and brown sugar. Spoon half of the mixture over each loaf. Bake for 45 minutes.
