Ingredients

  • 2

    cups flour

  • 2 1/2

    tblsp sugar

  • 1 1/2

    tblsp baking powder

  • 1/2

    tsp salt

  • 2 1/2

    cups milk

  • 2

    egg yolks, lightly beaten

  • 2

    tblsp butter, melted

  • 2

    tblsp fresh lemon juice

  • 1

    tsp freshly grated lemon peel

  • 2

    egg whites, stiffly beaten

  • 1

    tsp oil

  • Powdered sugar (garnish)

Directions

Sift flour, baking powder and salt into large bowl. Combine milk, egg yolks, butter, lemon juice and peel in another bowl and mix thoroughly. Stir milk into dry ingredients until juist moistened, DO NOT OVERMIX. Gently fold in egg whites. Preheat griddle or electric skillet to 400F. Brush with oil. Using about 1/4 cup batter for each, cook pancakes until done, turning once, about 3-4 minutes. Transfer to heated platter. Sprinkle with powdered sugar and serve immediately.
