  • 1 1/2 cups cornmeal mix
  • 2 teaspoon salt
  • 1/4 cup all purpose flour
  • 2 1/2 cups water
  • 1 lb. okra - sliced
  • 1/2 cup chopped onion
  • 1 tablespoon canola oil

Preparation

Step 1

Whisk together cornmeal, flour & salt. Add water. Stir in okra & onions.
Heat dutch oven to medium heat. Add oil. Use a small ladle to pour batter onto skillet. Pan should be very hot, batter should sizzle. Cook until underside is brown, 3 - 4 minutes. Flip & brown on the other side. Makes 10 cakes.
