    small yellow squash cut in large cubes

  • 1

    large vidalia onion cut in cubes

  • 8

    ounces sharp cheddar cheese cut into cubes

  • salt and pepper to taste

  • ¼

    cup italian bread crumbs

  • ¼

    cup parmesan cheese

  • 3

    TBS butter cut into small pieces


Preheat oven to 350 and coat a 9x13 baking pan Boil squash and onions until tender (15-20 min). Drain well and mash slightly. Transfer to baking pan and stir in cheese. Season with salt and pepper. Sprinkle bread crumbs and parmesan cheese over top and dot with butter. Bake for 25 minutes or until brown on top
