Ham and Cheese Scallop

  • 1 1/2 pounds potatoes cut into 3/4 inch cubes
  • 1 cup thinly sliced sliced carrots
  • 3 TBS butter
  • 3 TBS finely chopped fresh parsley
  • 2 TBS butter
  • 3 TBS flour
  • 1 tsp salt
  • 1/2 pepper
  • 1 cup milk
  • 1/2 vegetable cooking liquid
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups diced ham
  • 1/2 cup coarse fresh bread crumbs



Step 1

Cook potatoes and carrots in salted water and reserve 1/2 cup of liquid

In a sauce pan melt butter and stir in parsley, flour salt and pepper. Stir until smooth and bubbly then stir in milk and reserved liquid. Cook until thickened and stir in cheese and cook until cheese is melted. Pour cheese sauce over potatoes and carrots and stir in ham. Transfer to a casserole dish and bake 30-40 minutes at 350. Toss bread crumbs in butter and spread over casserole.
