Skyline Apple Muffins

This recipe is from the Skyline Restaurant at the Orlando airport, which closed years ago. Amazing.

Ingredients

• 1-1/2 C. brown sugar
• 2/3 c. oil
• 1 egg
• 1 c. buttermilk
• 1 t. baking soda
• 1 t. salt
• 1 t. vanilla
• 2-1/2 c. flour
• 1-1/2 c. apples, chopped with skins on
• 1/2 c. pecans, chopped

Preparation

Step 1

Mix together sugar, oil, egg and buttermilk.

Sift together dry ingredients and add to sugar mixture.

Fold in apples and nuts.

Bake at 325 for approx 30 minutes.
