Ingredients
- 1 cup cucumber chopped
- 1/4 cup red onion, chopped
- 1 garlic clove, pressed
- 2 tbsp. vegetable oil
- 1/8 tsp salt
- 1/4 cup red bell pepper, chopped
- 1 jalapeño pepper, seeded and chopped
- 3 tbsp. rice vinegar
- 1/4 tsp sugar

Chop cucumber, pepper, onion, jalapeño and garlic. Add vinegar, oil, sugar and salt
