Tilapia in Lemon Butter Caper Sauce

Ingredients

  • 2 -7 to 8 oz portions of Tilapia or Blackbass, Grouper, or Snapper, Skinless
  • 1 TBSP Capers
  • 1 TBSP shallots minced
  • 1/4 cup heavy cream
  • Grapeseed oil for sauting
  • Flour for dusting
  • 1/4 cup dry white wine
  • 1 TBSP chopped parsley
  • Juice of 1/2 lemon or orange juice
  • 1 TBSP butter
  • 2 -3 tbsp of vegetable stock (optional)

Preparation

Step 1


Preheat oven to 450°. In a large saute pan, heat the pan and
grapeseed oil.
Dust tilapia lightly with flour and place in pan, seasoning with salt and pepper.
Saute the tilapia for approximately 1 to 2 minutes until golden brown.
Remove any excess oil and then add shallots, lemon juice, white
wine, heavy cream, and 2 tablespoons of vegetable broth.
Place in a 450 degree oven for approximately 3 minutes.
Remove from oven when fish is moist and cooked thoroughly.
Place the fish on a serving plate. Return the sauce to medium heat, add butter, and then adjust with salt
and pepper. Add vegetable stock, if needed.
Add parsley to finish and serve.
