Broccoli with Cheddar Sauce

Ingredients

  • 1 TBL flour
  • 1 C fat-free milk
  • 1/2 C (2-oz) shredded extra sharp cheddar
  • cheese
  • 3 TBL grated fresh parmesan cheese
  • 1/2 tsp dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp chopped fresh thyme
  • 1 1/2 LBS broccoli florets (abt 9 cups)

Preparation

Step 1

place flour in med. saucepan

gradually add milk, stiring constantly
w/ whisk until smooth

cook over med-high heat 2 min or until
mixture is bubbly & thickened,
stirring constantly
cook 1 additional min. stirring
constantly
remove from heat
add cheeses, mustard, S & P, thyme,
stirring w/ whisk until smooth
keep warm

add water ot lg. saucepan to depth of
1"
set lg veg steamer in pan
bring water to boil over med-high heat
add broccoli to steamer
steam broccoli, covered, 4 min or until
crisp-tender
serve broccoli immediately w/ sauce
