Ingredients
- 3 LB fresh broccoli spears
- 1 C chicken broth
- 1 TBL butter
- 1 1/2 tsp cornstarch
- 1/4 C cold water
- 2 egg yolks, beaten
- 3 TBL lemon juice
- 2 TBL grated lemon peel
Preparation
Step 1
place broccoli in lg saucepan
add 1" water
bring to boil
reduce heat
cover& cook 5-8 min or until crisp-tender
meanwhile, in sm. heavy saucepan heat
broth & butter until butter is melted
combine cornstarch & water until smooth
stir into broth mix
bring to boil
cook & stir for 2 min or until thickened
& bubbly
remove from het
stir sm. amt. of hot mix. into egg yolks
return all to pan, stirring constantly
bring to gentle boil
cook & stir 2 min longer
remove from heat
gently stir in lemon juice & peel
drain broccoli
serve w/ sauce
