BROCCOLI CHEESE SOUP

Ingredients

  • 1/4 LB marg or butter
  • 1/2 C white flour
  • 2 QTS water
  • 1 1/2 med white onions
  • 2 TBL marg or butter
  • 3 chicken bouillon cubes
  • 1/2 tsp dry mustard
  • 1/2 tsp paprika
  • 1/2 LB grated sharp cheddar cheese
  • 1 LB frozen chopped broccoli, thawed
  • (or 1 LB fresh chopped broccoli,
  • lightly steamed)

Preparation

Step 1

in lg. soup pot, melt 1/4 LB marg or
butter & then add flour
stir until flour is incorporated into
butter
add 1 QT water & stir until flour/butter
mix is completely dissolved
bring to simmer

dice onions & saute in 2 TBL butter until
translucent
add to soup pot
add additional qt of water to pot

add bouillon cubes, spices & cheese to
pot
simmer until cheese is completely melted
add broccoli & heat through

season w/ salt if necessary

thin w/ bit of water if too thick
