Chicken Wing Stew

  • 3 1/2 lbs chicken wings
  • 1 T butter
  • 1 cup chopped onions
  • 3/4 cup chopped scallions
  • 1 1/2 cup pearl rice
  • 3 cup chicken stock or water
  • 1 tsp each: pepper, paprika, oregano
  • 3 cloves of garlic - minced
  • Tabasco sauce
  • 1 large tomato - chopped
  • 1 zucchini- chopped
  • 3/4 cup frozen peas
  • 3/4 cup frozen corn
  • 1 sweet red pepper - chopped



Step 1

Fold chicken wing and brown in butter in large frying pan. Put wings in large pot. Fry onions and scallions in chicken drippings in the pan. Add rice to pan and stir for 2 minutes. Put the rice and vetables in the pot with the wings. Add broth or water and garlic. Bring to boil and then simmer for 15 - 20 minutes. Add chopped tomato, zucchini, corn and peas and simmer for 15 minutes adding all the seasonings. Season to taste and add tobasco sauce.
