Ingredients

  • 4 large cans of crushed tomatoes
  • 1 medium onion diced medium
  • 3 carrots medium diced
  • 3 celery ribs medium diced
  • 1/2 green bell pepper medium diced
  • 2 tsp. crushed garlic
  • 1 small can of tomato paste
  • 2 bay leaves
  • 1 1/2 tsp. oregano
  • 1 1/2 tsp. dried Italian herbs
  • 2 T sugar or to taste
  • salt and pepper to taste
  • 1-2 cups of red wine
  • and extra virgin olive oil

Preparation

Step 1

. in a hot skillet with olive oil saute the veggies until soft

. add in garlic and cook for a minute

.add in the tomato paste and cook for a couple of minutes, add a little olive oil to loosen the tomato paste

.add in red wine and stir for a minute, let wine reduce by half

. combine all ingredients in a stockpot or a crock pot and cook on low heat for at least 2 hours. Taste and adjust seasoning

. remove bay leaves and puree sauce , sauce is better made ahead of use
