Ingredients
- 4 large cans of crushed tomatoes
- 1 medium onion diced medium
- 3 carrots medium diced
- 3 celery ribs medium diced
- 1/2 green bell pepper medium diced
- 2 tsp. crushed garlic
- 1 small can of tomato paste
- 2 bay leaves
- 1 1/2 tsp. oregano
- 1 1/2 tsp. dried Italian herbs
- 2 T sugar or to taste
- salt and pepper to taste
- 1-2 cups of red wine
- and extra virgin olive oil

Preparation
Step 1
. in a hot skillet with olive oil saute the veggies until soft
. add in garlic and cook for a minute
.add in the tomato paste and cook for a couple of minutes, add a little olive oil to loosen the tomato paste
.add in red wine and stir for a minute, let wine reduce by half
. combine all ingredients in a stockpot or a crock pot and cook on low heat for at least 2 hours. Taste and adjust seasoning
. remove bay leaves and puree sauce , sauce is better made ahead of use
