Banananutty Muffins

Ingredients

  • 1 C whole wheat flour
  • 1 T baking powder
  • 1/2 t baking soda
  • 1/4 t salt
  • 1 C mashed ripe bananas (2 bananas)
  • 1/4 C white sugar
  • 1/4 C fat free sour cream
  • 1 egg
  • 1/2 t vanilla
  • 1/2 t cinnamon
  • 1/3 C chopped pecans (optional)

Preparation

Step 1

1. Preheat oven to 35o degrees. Arrange 12 muffin liners in muffin pan.
2. Mix flour, baking powder, baking soda and salt in bowl.
3. In separate bowl, combine mashed bananas, sugar, sour cream, egg, vanilla and cinnamon.
4. Stir banana mixture into flour mixture until just combined. Add chopped pecans if desired. Spoon into 12 muffin cups. Bake for 18-20 minutes.
