Prosciutto and Pea Bowtie Pasta

Ingredients

  • 1 lb Bowtie pasta
  • 2 tbsp Olive oil
  • 2 tbsp Garlic , finely chopped
  • 1 pkg. Artichoke hearts, frozen , thawed
  • 1 Red pepper , diced finely
  • 1 cup Peas, frozen , thawed
  • 1/2 lb Prosciutto di Parma® , sliced
  • 3 tbsp Fresh parsley , finely chopped
  • Salt & pepper , to taste
  • Boar's Head Parmigiano-Reggiano , shredded

Preparation

Step 1

Cook bowties according to package directions.

While the pasta cooks, heat the oil in a medium skillet and saute the garlic. Drain the artichokes and add them to the skillet with the red pepper just until the garlic turns golden brown; add the peas and cook another minute.

Drain the pasta and place in a serving bowl. Add the artichoke/pea mixture, prosciutto, and parsley. Toss gently. Season with salt and pepper if desired.

Sprinkle with cheese and serve.
