Ingredients

  • steaks
  • garlic
  • salt
  • cracked peppercorn
  • 1/4 C butter
  • 1/2 C Brandy
  • 2/3 C Whipping Cream

Step 1

rub steaks with clove of garlic. Sprinkle with salt and peppercorn. Rub well. In heavy skillet add butter. When butter stops frothing, sear steaks on all sides. Use tongs, poor brandy and ignite. let it burn out. Remove steaks, keep warm. Raise glaze in pan with small amount. stir in 2/3 cup whipping cream. taste and adjust flavor if necessary. Reduce heat. Stir 3 or 4 min until residual juices have blended.
