Ingredients

  • 1/3 Cup canola oil
  • 1 Tsp golden flaxseed meal
  • 2 Tsps very hot water
  • 1 Cup gluten-free all purpose flour
  • 1 Cup gluten-free yellow cornmeal
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • 1 Tsp salt
  • 1 Cup milk
  • 1/4 Cup honey
  • 2 Large eggs

Preparation

Step 1

1. Preheat oven to 450F.

2. Pour the oil into a 10-inch ovenproof skillet. Place in the oven for 3 minutes as it preheats.

3. Combine the flaxseed meal and hot water and stir until thick; set aside.

4. Combine the flour, cornmeal, sugar, baking powder, and salt in a bowl. Combine the milk, honey and eggs in a separate bowl or measuring cup. Add the milk mixture and flax slurry to the flour mixture and stir until combined.

5. Carefully remove the hot skillet from the oven. Pour batter into the skillet-it will bubble in the hot oil. Return the skillet tot he oven and bake for 15 minutes until golden.
