Strawberry Pound Cake

Ingredients

  • 2 cups of all purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. nutmeg or ground mace
  • 1/4 tsp. salt
  • 1 1/2 cups of sugar
  • 1 cup (2 sticks) butter, softened
  • 1/4 cup of milk
  • 1 1/2 tsp. vanilla extract
  • 1/2 tsp. grated lemon zest
  • 4 large eggs
  • 1 pkg. (16 oz.) frozen sliced strawberries, thawed, well
  • drained and chopped
  • Whipped cream (optional)
  • Sliced fresh strawberries (optional)

Preparation

Step 1

Preheat oven to 325 degrees. Grease and flour a 9X5" loaf pan.

Combine the flour, baking powder, nutmeg and sealt in a medium bowl. Set aside.

Combine the sugar and butter in a large bowl. Beat with an electric mixer set on medium speed until light and fluffy, 1-2 minutes. Add the milk, vanilla and lemon zest. Beat until well mixed, 1/2 minutes longer. Reduce speed to low. Gradually beat in the flour mixtutre. Beat in the eggs, one at a time. Fold in the strawberries.

Pour the batter into the prepared pan. Bake until a toothpick inserted in the center comes out clean, 1 hour to 1 hour and 10 minutes. Cool the cake in the pan for 15 minutes. Carefully turn the cake out onto a wire rack to cool completely.

Serve with whipped cream and strawberry slices, if desired.
