Baked Pear Frittata

  • 2 firm pears
  • 2 tbsp butter
  • 6 large eggs
  • 1/3 cup milk
  • 1/4 cup all purpose flour
  • 1/4 cup sugar
  • 1 tbsp vanilla
  • 1/4 tsp salt
  • 1/4 cup cream cheese, whipped
  • 1 to 2 tbsp brown sugar



Step 1

Peel and dice pears. Over medium-high hear melt butter, add pears, and turn occasionally until lightly brown and tender. This should take 7-8 minutes.

Whisk eggs, milk, flour, sugar, vanilla and salt in a bowl. Remove pan from heat and cool a few minutes. Pour egg mixture over pears.

Preheat oven to 425 degrees. Put pear mixture in an 8x8 inch glass pan and bake until golden brown, 8-10 minutes. Cut into wedges and serve with dollops of cream cheese and brown sugar.
