Rack of Lamb

Ingredients

  • 1 (2LB) rack of lamb
  • 1/4 LB unsalted butter, softened
  • 2 cloves garlic
  • 4 TBL dijon-type mustard
  • 4 TBL finely chopped parsley
  • 2 TBL olive oil
  • salt & freshly ground pepper

Preparation

Step 1

preheat oven to 500
butter heavy baking pan
combine all & stir into paste
coat meaty side w/ paste
put on baking pan, coated side up
roast 20-25 min
if rib bones begin to brown, cover w/ foil
