Ingredients

  • Sauce:
  • 12 pork tenderloin or chicken, trimmed and cut into 4-3oz pieces
  • Salt and pepper
  • 1 1/2 cups panko
  • 2 TBS sesame seeds
  • 2 eggs
  • 1/4 cup flour
  • 2 TBS veg oil
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 2 TBS lemon juice
  • 2 TBS soy sauce
  • 1 TBS fish sauce
  • 2 TBS shallots, sliced
  • 1 TBS minced garlic
  • 1 TBS minced ginger
  • 1 TBS seeded and chopped Serrano chile

Preparation

Step 1

1. Pound pork or chicken until 1/2" thick, season with S&P
2. Combine panko and sesame seeds in shallow dish. Whisk eggs in another dish. Place flour in a third shallow dish
3. Dredge pork in flour, dip in eggs, and then coat in panko mixture
4. Heat oil over medium-high heat until it shimmers. Sauté meat, flipping once until golden brown and meat registers 145 for pork and 160 for chicken, about 5-6 minutes total.
5. Sauce - heat sugar in skillet over medium until it is color of iced tea, 7-10 minutes
6. Combine vinegar, lemon juice, soy sauce and fish sauce; carefully add to caramel, whisking until smooth.
7. Add shallots, garlic, ginger and Serrano. Increase heat to medium-high; simmer sauce until thick and reduced by half, about 5". Strain sauce through a fine-mesh strainer; discard solids. Serve sauce with cutlets
