Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 1 cup salsa
- 2 tablespoons chili powder
- 1 teaspoon instant beef bouillon granules
- 1 cup whole kernel corn (8 oz.)
- 1/2 cup sliced ripe olives, optional
- 1 package Jiffy corn muffin mix (8 1/2 oz.)
- 1 cup shredded cheddar cheese (4 oz.)
- 1/2 cup diced green chilies, optional

Preparation
Step 1
Heat oven to 350 degrees. Cook beef and onion in medium skillet over medium-high heat (5 - 6 minutes). Drain. Stir in salsa, chili powder and bouillon; bring to boil. Reduce heat to low and cook 5 - 6 minutes, stirring occasionally. Stir in corn and optional olives. Spoon into ungreased 9" square baking pan. Prepare batter for corn muffin mix according to package directions. Stir in cheese and optional chilies. Spoon over meat mixture. Bake, uncovered, for 30 - 35 minutes or until top is golden brown. Serve with additional salsa, if desired.
