Caprese Pasta and Steak

Ingredients

  • 8 oz dried large rigatoni
  • 2 tbsp + 1/3 cup pesto
  • 1 lb flat iron steak
  • 4 roma tomatoes
  • 4 oz sliced fresh mozzarella cheese
  • fresh basil

Preparation

Step 1

Cook 8 oz dried large rigatoni and drain. Meanwhile, brush 2 tablespoons of pesto on a 1 lb flat iron or tri-tip steak, cut into 4 portions. Skillet-cook steaks over medium heat about 10 minutes, turning once. Divide pasta among plates. Top with steak, 4 sliced roma tomatoes, and 4 oz. sliced fresh mozzarella cheese. Microwave about 1/3 cup pesto for 20 seconds or until hot. Drizzle over servings and top with fresh basil.
