Pecan Crusted Tilapia with Blueberry Balsamic Reduction

Ingredients

  • 12 ounces flounder
  • 1 cup pecans
  • 1 cup flour
  • 1 cup Egg Beaters® 99% egg substitute
  • 1 pint blueberries
  • 1/2 cup balsamic vinegar
  • 2 tablespoons light butter

Preparation

Step 1

1. Oven to 350*. Place pecans into food processor and pulse into coarse meals. Place into dish for dredging it seasoned flour and mix 1/2 cup of flour. Crust fillets by dredging it seasoned flour, then dipping into egg wash and finally crusting with pecan flour.

2. Pan fry 2-4 minutes then place in oven for 5-7 minutes.

3. Place balsamic vinegar and 3/4 of the blueberries into small sauce; reduce by half and place into blender.
