Horseradish Cream Sauce with Chives

Ingredients
- 1 cup heavy cream, chilled
- 2 inch piece fresh horseradish root, grated, or 2 tablespoons prepared horseradish, or to taste
- Salt and ground black pepper
- 2 teaspoons lemon juice
- 1/4 cup minced fresh chives
Preparation
Step 1
Beat cream in deep bowl with handheld mixer at medium speed until thick but not yet able to hold soft peaks, about 11/2 minutes. Whisk in remaining ingredients until just combined. (Can be covered and refrigerated up to 2 hours; whisk briefly just before serving).
