Ingredients
- 1 1/2 lb Calamari
- 2 eggs
- 1/2 c + 2tbs olive oil
- 2 1/2 c Italian bread crumbs, seasoned
- 1/4 c minced parsley
- 3/4 c grated Romano cheese
- 1/4 c minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
Preparation
Step 1
In a small mixing bowl, beat the eggs until frothy. In another mixing bowl, combine 1/2 cup olive oil with the breadcrumbs, parsley, grated cheese, garlic, salt and pepper. Heat a tablespoon or 2 of olive oil in a frying pan. Dip each piece of Calamari in the beaten eggs, then roll in the bread crumbs mixture. Fry in the skillet until golden brown, about 1
to 2 min. Transfer pieces to paper towels to drain until all the pieces are fried.
