BACON OMELET WITH SALSA

Ingredients
- 8 eggs
- 1 cup (250 ml) milk
- 1/3 cup (90 ml) flour
- 4 slices bacon, cooked and crumbles
- 1 red pepper, finely chopped - optional
- 3 green onions finely chopped - I use a regular onion
- 1 tsp. (5 ml) oregano or Italian seasoning
- 1 cup (250 ml) shredded mozzarella or cheddar cheese
- salsa- warmed if desired

Preparation
Step 1
heat oven to 350F.
Line a 15"x10" cookie sheet with parchment paper with ends extending over long sides
Spray well with cooking spray
Beat eggs, milk and flour in large bowl with whisk, until well blended.
Add next 4 ingredients
Pour into prepared pan.
Bake 14 to 16 min. or until edges are set.
Top with cheese and bake 2 min. longer or until melted.
Roll up immediately, starting at long side, peeling off paper as omelet is rolled.
Place on platter, cut into slices and serve with salsa.
