Cajun-Style Marinade

Ingredients

  • 1 can (16 oz.) tomatoes, with liquid
  • 1/2 cup cooking oil
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green pepper
  • 2 cloves garlic, minced
  • 1 tsp. dark brown sugar
  • 1/4 to 1/2 tsp. hot pepper sauce
  • 1/2 tsp. dried basil leaves
  • 1/2 tsp. dried oregano leaves
  • 1 bay leaf
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. coarse ground black pepper

Preparation

Step 1

Coarsely chop tomatoes; combine with liquid and remaining ingredients. Use with chicken, beef and pork. Makes about 2 1/2 cups.
