Shrimp with Feta

Ingredients

  • 1/4 cup lemon juice
  • 1 lb medium shrimp peeled and deveined
  • 1 cup minced green onion
  • 2 garlic cloves minced
  • 2 tbl minced fresh parsley
  • 1/4 cup olive oil
  • 1 1/2 cups canned Italian Plum tomatoes
  • 1/4 cup clam juice (optional)
  • 3 tbl butter
  • 1 tomato peeled and chopped
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 cup dry white wine'
  • 2/3 cup feta cheese crumbled

Step 1

Drizzle lemon juice over shrimp and set aside.
Saute green onion, garlic, and parsley in hot oil in a skillet until soft; add canned tomatoes and bring to boil. Reduce heat to medium-low and simmer covered 20-30 minutes.

add clam juice if desired and simmer 5 minutes
Preheat oven to 350 degrees
Melt butter in a separate skillet over medium heat and saute shrimp 4-5 minutes until shrimp turns pink.
Pour tomato mixture into a 2qt shallow baking dish; put chopped tomato in center and surround with shrimp. Sprinkle oregano and basil over shrimp.
Pour wine over top and sprinkle with feta. Bake at 350 degrees for 15-20 minutes. Serve over hot cooked angel hair pasta
