Ingredients

  • 2 cups Maseca, instant corn masa mix (in Latino section of grocery)
  • 1/2 - 1 tsp salt more or less to tast
  • 1-1/8 cup water
  • taco meat
  • refried beans
  • queso fresco, cut into small slices, or grated cheddar or mozzarella

Preparation

Step 1

Mix the first three ingredients thoroughly with hand until dough forms a firm ball, add more flour or water as needed. Pinch off enough dough to make about a 2 inch size ball. Platen slightly in palm of hand forming a little "well" in the center. Fill with a small amount of any of the above fillings. fold the dough in over the filling, completely hiding the filling. Flatten into a nice round tortilla which will be approximately 1/4 inch thick. Cook on a very hot griddle, like a pancake, until both sides are slightly golden. a little bit of cooking spray helps them brown nicely. Serve with salsa or red sauce
