  • Butter
  • 2 Cups corn chex
  • 3 Eggs
  • 3/4 Cup milk
  • 2 Tbsps chopped red sweet pepper
  • 1/4 Cup butter, melted
  • 1 Tsp salt
  • 1/2 Tsp pepper
  • 3 Cups frozen or fresh whole kernel corn
  • 4 Tbsps gluten-free bread crumbs

Preparation

Step 1

1. Preheat over to 350F. Grease a 1 1/2 quart baking dish or casserole with butter. Set aside.

2. Place corn chex in a plastic bag and crush with a rolling pin. Measure 3/4 cup crushed cereal; set aside. Save any remaining crushed cereal for another use.

3. Beat eggs and milk until well mixed. Add sweet pepper, the 1/4 cup melted butter, the salt, pepper, and crushed corn chex and mix well.

4. Add corn. Mix well and pour into baking dish. If desired, top with buttered gluten-free bread crumbs. Bake for 45 minutes.
