Ham, Cheese & Veggie Frittatas (Individual Serving)

Ingredients
- 1 lb. frozen hash brown potatoes -thawed
- 4 eggs, beaten
- 1 Tbl. fat-free milk
- 2 oz. cooked lean ham, finely chopped
- 1/8 cup chopped green peppers
- 1/8 cup chopped onions
- 1/2 cup shredded low-fat cheese
- salt & pepper to taste
- *Note: this is 2 points on Weight Watchers
- Preheat oven to 350.
- 1 . Coat 8 muffin tins with cooking spray. Divide potatoes evenly between tins, place in oven and cook 10 minutes.
- 2 . Meanwhile, mix together all other ingredients.
- 3 . Remove potatoes from oven after 10 minutes and carefully press potatoes into tins to resemble mini pie crust.
- Potatoes should cover the bottomand side of each tin.
- 4 . Pour about 1/4 cup egg mixture into the center of each muffin tin.
- 5 . Return muffin tin to oven and cook until egg mixuture is set, about 15 minutes. Remove from oven, let sit for 5 minutes before serving.
