Bacon & Potato Chowder

Ingredients

  • 24 slices of bacon
  • 4 cups diced onion
  • 4 garlic gloves minced
  • 12 cups diced potatoes
  • 12 cups chicken broth
  • 1/2 cup flour
  • 4 1/2 cups whipped cream

Preparation

Step 1

Fry bacon until crisp. Remove bacon
Sautee onions and garlic in bacon grease
Add potatoes and broth
Heat to boiling
Cover and simmer until potatoes are cooked
Add bacon
Mix flour with water to make a paste and add to the soup
Cook until boiling and thickens
Remove from heat and add whipped cream
