Carrot Cake Cookies

Ingredients

  • Filling:
  • 1 1/8 c. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1 stick softened butter
  • 1/3 c. + 2 Tbs. brown sugar
  • 1/3 c. + 2 Tbs. sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 c. grated carrots (around 2)
  • 1 c. chopped nuts
  • 1/2 c. raisins
  • 8 oz. cream cheese
  • 1/4 c. honey

Preparation

Step 1

Whisk dry ingredients together.

Cream the butter, sugars, egg and vanilla together for around 2 minutes.

Add the carrots, nuts, and raisins. Stir in the flour until just combined.

Bake at 375 degrees for 12-16 minutes.

When cool, sandwich two cookies the blended cream cheese and honey.
