  • 3/4 cup flour
  • 1-1/2 cup cornmeal
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1/1 /4 cup milk
  • 1/4 cup oil



Step 1

Mix all dry ingredients. beat the eggs and add to the milk. Combine dry and wet ingredients (for a bit of variety, add Mexicorn, chopped onion, chopped garlic, chopped jalapeno's - or any variety of the four). Mix until smooth. Oil a cast-iron skillet. Pour batter in oiled skillet. Bake at 400 for 30 minutes. Serve hot with lots of butter.
