Appetizer Meatball Sandwiches

Ingredients
- 1 loaf firm, thinly sliced, white bread such as Pepperidge Farm
- 1 lb. ground pork
- 1 large egg
- 1/2 cup grated Romano cheese
- 1/4 cup finely chopped italian parsley
- 1 garlic clove, minced
- 1 tsp. dried Italian seasoning
- salt and pepper
- 1/2 cup unsalted butter, room temperature

Preparation
Step 1
Place the two crusts of the bread in food processor to make bread crumbs. Measure 1/2 cup.
In a large bowl, combine pork, egg, cheese, parsley, breadcrumbs, garlic, seasoning, salt and pepper. Mix well
Preheat oven to 325. Line 2 baking sheets with parchment paper. Shape to pork mixture into 1 inch balls and place on prepared baking sheet. Lay 2 slices of bread on work surface. Butter one side of each piece. Place 4 meatballs on the butter surface of each slice of bread. Top each with another slice of bread, buttered side down. Press firmly to adhere. Use a serrated knife to remove the crusts. Cut sandwich into 4 equal squares. Transfer to other lined baking sheet.
Repeat process until all ingredients are used.
Bake sandwiches until golden brown, about 30-40 minutes. Transfer to wire rack and cool briefly before serving.
May be served with marinara sauce for dipping
