Mini Cheese Cakes

Ingredients

  • 2 8oz. pkg. of cream cheese
  • 3/4 cup sugar
  • 3 eggs
  • 1 tbsp lemon juice
  • vanilla wafers
  • Fruit pie filling

Preparation

Step 1

Cream cheese and sugar together and add the eggs.
Beat until smooth and blend in lemon juice. Use small cupcake paper liners and put a vanilla wafer inside, upside down.

Add cream cheese mixture overtop.

Cook for 18-20 minutes
