BBQ Pulled Jackfruit

Ingredients

  • Dry Rub
  • 1 tablespoon of chili powder
  • 1 teaspoon of paprika
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of white pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon of cayenne pepper
  • 1/4 teaspoon cumin
  • Barbecue sauce
  • 1 cup of tomato sauce
  • 3 cloves of garlic
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon of dark molasses
  • 1/4 cup of brown sugar
  • 1 teaspoon of salt
  • 1 teaspoon of paprika
  • 1 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon of cayenne pepper
  • 1/4 teaspoon of white pepper
  • 1 tablespoon of lime juice
  • 2 peppers in adobo sauce – remove the seeds
  • 1 tablespoon olive oil
  • 1 tablespoon cilantro
  • 1 17 ounce can of jackfruit packed in water

Preparation

Step 1

Mix the dry rub spices together in a small bowl.
Drain and rinse the jackfruit and rub with the dry rub spices. Set aside
Put the sauce ingredients in a blender and blend until fully combined. Put the sauce and the jackfruit in a medium sauce pan and bring to a boil. Reduce to a low simmer and cook for approximately 30-40 minutes or until the jackfruit shreds easily. Stir frequently.
