Italian Sausage over Potato Salad

Ingredients

  • 2 pounds potatoes, peeled, cubed
  • Salt and pepper to taste
  • 4 Italian sausages, mild
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon finely diced onion
  • 1/2 cup olive oil

Preparation

Step 1

In a large soup pot or Dutch oven, place potatoes. Season with salt and pepper to taste and cover with water. Bring to a boil, reduce heat and let simmer until potatoes are tender or about 20 minutes. Drain and set aside on serving platter. While potatoes are cooking gently poke sausages fork all over surface to allow vents in casing. Place sausages in a large skillet and add enough water to cover sausages half way. Bring water to a boil, reduce heat and continue to simmer until water has evaporated. After water has evaporated continue to cook sausages until they are nicely browned all over. Prepare dressing: In a small mixing bowl, combine remaining ingredients; add salt and pepper to taste then drizzle over drained potatoes; toss to coat. Place sausages on top of potatoes and serve.

Serving Suggestions: Serve with halved pears that have been sprinkled with cinnamon and lightly broiled.
