Gingered Yams

These are the ones I usually prepared at Thanksgiving.

Ingredients

  • 4 lb. yams
  • 3-4 T. butter
  • 3/4 t. dried sage
  • 1/4 t. ground ginger
  • Salt to taste

Preparation

Step 1

Cook quartered potatoes in microwave with a little water on the bottom of the microwave-safe dish-about 8 minutes on high.
Mash yams with the butter. Stir in sage and ginger. Salt to taste.
