Irish Tea Brack

Ingredients

  • 1 1/2 cups cold strong tea
  • 2 cups all purpose flour
  • 1/2 cup soft brown sugar
  • 3 cups mixed dried fruit (raisins, currants, sultanas)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon mixed spice or allspice
  • 1 egg

Preparation

Step 1

Place the tea, sugar and dried fruit in a bowl, stir well and cover. Let soak overnight. Next day preheat oven to 350 F and grease a 2 lb loaf pan with butter.

Beat the egg and mix it thoroughly with the fruit.

Sift the flour, spices and baking soda together and stir well into the fruit mixture.

Turn the batter into the pan, place in the oven and bake for 1 hour.

Allow to cool in the pan for 20 minutes before turning out to a wire tray to cool.
