Ingredients
- 2 pkg (3 oz. each) any flavor Ramen Noodles
- Dressing;
- 1/3 c. bottled Thai Peanut Sauce
- 2 Tbsp. each lite soy sauce, cider vinegar and water
- 1 tsp. Sugar
- 1 bag (16 oz.) coleslaw
- 1 medium English (hothouse) cucumber, halved lengthwise, then sliced thin
- 1/2 c. sliced Scallions

Preparation
Step 1
1. Bring 4 c. water to a boil in a 3 qt. saucepan. Break noodles in thirds and boiled 3 minutes or until tender. Drain in a colander; cool under cold running water.
2. Meanwhile mix Dressing ingredients in a large bowl; add noodles, coleslaw, cucumber and scallions.
3. Toss to mix and coat
